tablespoons mayonnaise or salad dressing
tablespoons country-style Dijon mustard
tablespoons real maple syrup
small shallot, finely chopped (about 3 tablespoons)
slices rustic bread
slices (1 oz each) Swiss cheese
cups sliced deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
medium ripe avocado, pitted, peeled and sliced
In small bowl, mix mayonnaise, mustard, maple syrup and shallot. Spread on all 8 slices of bread.
Top 4 slices of bread with cheese, chicken and avocado. Top with remaining bread slices.
Shallots are in the onion family but have a milder flavor than onions. They are usually purplish in color and add a sweet yet savory zing to this sandwich.
