Ingredients

cups chopped cooked corned beef brisket
1 1/2
cups chopped cooked potatoes (about 1 1/2 medium)
1 1/2
cups diced cooked beets (about 12 oz fresh beets)
1/3
cup chopped onion
1/2
teaspoon salt
1/4
teaspoon pepper
1/4
cup shortening
Chopped fresh parsley, if desired

  • 1 In large bowl, mix all ingredients except shortening and parsley.
  • 2 In 10-inch skillet, heat shortening over medium heat until melted. Spread beef mixture in skillet. Cook 10 to 15 minutes, turning occasionally with wide spatula, until brown. Sprinkle with parsley.

Very good! One of the best parts of the celebration is the leftovers. The picture includes an egg but the recipe doesn't, so I just naturally added 4 eggs to my copy. I like mine basted, but poached or fried works, too. :)
