Corned Beef Skillet Hash

Ingredients

  • 2 cups chopped cooked corned beef brisket
  • 1 1/2 cups chopped cooked potatoes (about 1 1/2 medium)
  • 1 1/2 cups diced cooked beets (about 12 oz fresh beets)
  • 1/3 cup chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup shortening
  • Chopped fresh parsley, if desired

    In large bowl, mix all ingredients except shortening and parsley.
  • 2
    In 10-inch skillet, heat shortening over medium heat until melted. Spread beef mixture in skillet. Cook 10 to 15 minutes, turning occasionally with wide spatula, until brown. Sprinkle with parsley.

  • One can (12 ounces) corned beef can be used for the brisket.
  • One can (15 ounces) sliced beets, drained and diced, can be used for the cooked beets.
  • Skip the beets (and the red flannel) for a tasty meat and potatoes hash.
