I looked at b/c I was tired of my own used-up recipes. I made many changes and the quiche idea was interesting. Used: 3/4c fat free milk, 1 sliced green onion, 4 eggs, 1 cup of green giant steam crisp southwestern style corn(mix of corn, black beans, n red bell peppers) thouroughly drained of moisture, 1 1/4 cups of colby jack cheese(reserved 1/4 for topping off quiche before baking), and par baked a crust with finely diced red bell peppers in it. Taking it to cheer a friend who lost someone dear to her.

This was very good. Added onions and mushrooms..Also, took about 45 mintues to cook. Do let it set before cutiing. Will make again.

Great base recipe. It does take a little longer to cook though, about an hour. I added peppers and black beans to it... very delicious!

OK, I cheated; I made a crust (Crisco's recipe from the label.) I also used regular milk instead of soy milk. Loved it! Freezes well for lunches too.

Of course I knew this recipe is essentially eggs, corn, cheese and tomatoes, but I was expecting something more than a corn and tomato OMELET. I would never make this again, but if I did I would definitely add some chunks of ham and serve it for breakfast. But then again, it would just be easier to make an omelet.

I did it for dinner, the taste was good but it took longer in the oven, about an hour to get the center settled. Also there was a lot of "water", I guess it was from the tomatoes so next time I´ll do it; I´ll put less milk so it will not be so watery...
