There's something especially appealing about mini-desserts, like these cupcake-size cheesecakes. Creme-filled chocolate cookies add flavor and crunch.

OMG these are great and i dont like cheese cake! The only bad thing is that the paper is a little difficult to get off. But also made it again but in a pie crust (oreo pie crust) and everyone loved it (i thought it tasted more like cheesecake then so i didnt like it) and i cooked it for about 20-25 min.

I just made these for my holiday party at work and they were a hit, no leftovers! They are a bit labor intensive (you have to mash the oreos with a potato masher or something to get them to be the size you need) but worth it. And for a neat holiday addition, I decided to split the batter and add red and green food coloring (only 2 drops each will do ya). Then I topped them with holiday sprinkles and baked them in gingerbread muffin cup liners. I reckon you could easily make these holiday hits (i.e Valentine's day, 4th of July, Birthdays, etc.) by changing up the colors, sprinkles, and liners to suit your needs. I will definitely try these again. So yummy!
