I only had one package of Biscoff cookies so I used gingersnaps to make up the difference. It turned out yummy! And yes, it really does need that much cinnamon.

Hi guys! A caramelized cookie biscuit is a Biscoff cookie -- you can find the packages at pretty much any grocery store. If you can't find them, graham crackers can also work, the taste will just be slightly different.

You could try Pepperidge Farm Bordeaux cookies. They are caramelized brown sugar cookies. Very crisp & very delicious.
