I'm so excited to be the first to review this dish. It took several tries to collect all the ingredients (had to use hash brown patties first time), but I finally made it. Absolutely delicious! If you like quiches, this is a neat variation. I have made it twice and am ready to go again with another variation--adding meat--sausage or ham sounds appealing. It really is a tasty dish and it freezes well (cut up first). Heats in microwave with ease; also makes a good side dish at breakfast or supper. I'm thinking Vidalia onions would be good in this and I plan to add bell pepper next time. See? A good dish to experiment with!
