medium potatoes, cooked and chopped (2 cups)

small bell pepper, chopped (1/2 cup)

medium green onions, sliced (1/4 cup)

hard-cooked eggs, chopped

This is in respose to the view left by C..First of all If I wanted a recipe low in salt or fat I would not be looking for recipes here.Cooking Healthy is a good site you should try.Also reguarding your beet comment.Traditional corned beef hash included beets usually.It stopped showing up once the canned variety came out.
