Confetti Candy Cupcakes

These were rather tasty, and not too difficult to make. However, I had a couple of issues. The recipe says it made 30 cupcakes, and I only got 24 out of my batch. I had to make another 1/3 batch (about 8) to get my required amount. I also had some issues with the frosting. I had a hard time finding the right consistency. My issue may be that I typically use can frosting, which was the consistency I was looking for. However, I kept adding powdered sugar, and never got there. It still seemed quite liquidy until I let it cool, but then it got hard. Anyway, it turned out to be more like a ganache, so I had to keep reheating it so it was spreadable for my cupcakes. I ended up topping them with mini m&m's (quickly before the icing cooled and hardened). After trying them, though, they were very good. I hope my daughter's classmates enjoy them. I'm pretty sure they will.
