A quick, easy dish that was perfect on a 113-degree afternoon. A word of warning, though: be careful about the garlic! I used two small cloves, thinking it wouldn't make all that much of a difference and boy, was I wrong! It had almost too much of a punch to it! Still though, we enjoyed it and I know it will be a dinner staple in August when the weather really turns up the heat.

Very tasty. The only change I made was adding red pepper flakes and serving in a frozen Martini glass with an avocado slice to garnish. Beautiful and Delicious!

I have used this recipe, or a variation of it, for years and my family and friends love it. It is so simple to prepare and stays fresh in the refrigerator(I store it in glass jars)for days. Tortilla chips and a little cheese makes a great meal. Enjoy it as an appetizer as well.
