Ingredients

1 1/2: cup Flour

1/3: cup Sugar

2: teaspoon Baking Powder

1/4: teaspoon Salt

1/4: cup Baking Cocoa

1: cup Milk

1: Egg, beaten

1/2: cup Unsalted Butter

1: tablespoon Instant Coffee Granules

1/2: cup Semi Sweet or Milk Chocolate Chips

1: package, 3 oz. Cream Cheese, softened

1: tablespoon Sugar

1/8: teaspoon Vanilla Extract

1/4: cup White Chocolate Chips

Directions

1 Preheat oven to 375 F. Use cooking spray to grease medium sized muffin pan or use paper liners.
2 Mix Flour, 1/3 cup Sugar, Baking Powder, Salt, and Baking Cocoa in bowl until blended. Melt Butter in microwave. Stir in Coffee Granules. Add Milk, beaten Egg, and Butter mixture to dry ingredients until just blended. Fold in semi-sweet or milk chocolate chips. Fill muffin cups about 3/4 full with batter.
3 Blend together softened Cream Cheese, Vanilla, and 1 tablespoon Sugar until creamy. Fold in white chocolate chips. Drop tablespoonfulls of filling ontop of each muffin cup, pressing down slightly.
4 Bake about 20-25 minutes, Cream Cheese will be just turning golden brown. Remove from pan to cooling rack. Store in air tight container.

For more of a coffee boost, use Instant Expresso Granules. Use freezer bags to pipe in batter and filling. Dumping miffins to rack will spill filling. Use a fork or spoon to scoop out.
