Ingredients

can (16.3 oz) Pillsbury® Grands!® refrigerated buttermilk biscuits
3/4
cup sugar
3
tablespoons all-purpose flour
1
can (13.5 oz) coconut milk (not cream of coconut)
1/2
cup coconut

Directions

  • 1 Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Remove biscuits from can. Cut each biscuit into 4 pieces; arrange in baking dish.
  • 2 In medium bowl, mix sugar, flour and coconut milk with wire whisk until blended and smooth. Pour over biscuit pieces in baking dish. Sprinkle evenly with coconut.
  • 3 Bake 25 to 30 minutes or until deep golden brown. Cool 5 minutes before serving.

So good and easy! My mom is Thai and loves coconut. She loved these and said there's a very similar dessert in Thailand. I served them with an egg casserole for brunch. Use a pizza cutter to cut the biscuit dough.

I had a can of Coconut Milk left in my pantry for an Asian dish I was once going to prepare but instead I had forgotten about it, so I had no idea what to use it for until I came upon this recipe. I was hesitate at first, but it came out great. It's something you need to eat while hot because as it cools down it becames very thick and sticky. I was happy due to the outcome of this dish because my husband is very picky and has a huge sweet tooth, but in the end he ate as much as he could and then ate the left overs in the morning heated up in the microwave. I recommend.
