I bake A LOT and I would not recommend this recipe at all! I think it would have been much better to just make the lemon cake according to the package and then add icing and coconut. There was something about the jello being in the mix that just made the texture of the cake horrible!

This cake was a hit!! I made it for Easter and everyone raved about it. It tasted light and fluffy with a nice but not overpowering lemon flavor. I added a few malted pastel eggs for a little decoration.

Maybe Stephanie put too much water in the cake. Recipe calls for jello, and this would be dry from the box. Note the reduced water. I have made many cakes from mixes with either jello or pudding and they always come out good.

Awful recipe! I have never made a box cake with jello in it, and never will again! Everyone in my family called this the swimming pool cake, as I baked it in a 9 x 13 pan and it came out big and fluffy on the sides, and completey sunk in in the middle. When I cut into it and tasted it, the edges were delicious, but the center was mushy and heavy, where all the jello had settled for some reason. I should have just made the cake as is! It would have tasted better!

I made this cake to take to a friend's house at the shore. She put it in the refrigerator and we had it for dessert. It was excellent. Very moist and great taste - not crumbly at all. Loved it. They wanted my recipe for the cake. I will definitely make it again for another occasion.

I baked this cake on 5/28/09 and I only have 2 slices left. The cake was very moist because I used almost a cup of water instead of 2/3 cups and just a little bit more than 1/3 cup of vegetable oil. And I also made my own icing (buttercream)and then sprinkled coconut on top but not too much.Not only did the cake taste great it was also beautiful because of the snow white icing and the sunny yellow inside of the cake.

I was very disappointed. The cake appeared coarse texture - crumbly - not as moist as it should have been. Layers did not stick together very well and I used frosting recipe called for. I followed recipe to the "T". Not a recipe I will keep.
