These are delicious! I didn't have cashews so I used walnuts. I also added crushed Honey Nut Chex Mix (not the pretzels though). My mom asked me for a recipe today & I just emailed this to her. I know she'll like them, too!

Outstanding! I made these cookies over the weekend and my family loved them. I don't like coconut but even I enjoyed these cookies a great deal. I added some mini semi sweet chocolate chips to half the batch and they tasted great. I will definitely be making another batch of these very soon. My husband wants the same cookies but he wants it to be a chocolate cookie with cashews but no coconut. I will experiment with adding either coco powder or melted baking chocolate.

These were great! I used pecans (what I had on hand), but I bet the salty cashews would even be better.

I just baked a batch of these cookies today. The only thing I did differently was to drop them by heaping spoonfuls onto the cookie sheet (did not want to use 1/4 cup dough for each cookie). They spread out and browned nicely. Really great with lots of coconut and cashews. Will definitely be making these in the future.

I love these cookies! They are rich with the butter, but it makes them such a tasty treat that it''s worth the calories! I love coconut and nuts so this was perfect. They look great too.
