This was a nice recipe. I make a coconut cake w/ cream cheese frosting from scratch and this was a nice go-to recipe when I don't have the time or feel like putting in the effort with that recipe. Very tasty and quite simple to make.

This cake is really good!I used cream cheese frosting instead of white chocolate frosting. I wish the cake itself was more moist but I guess the lack of butter explains that.

This cvake looks very inviting. I need to make a coconut using 9" round cake pans. I am having trouble finding the right recipe. She wants it made from scratch and frozen to use for the rt of July? Any suggestions? I need it by tomorrow so I can ke it , frost it and deliver it by this Friday in the afternoon. Thanks in advance.

I really enjoyed making this cake as it was quick and easy but has wonderful coconut flavor, even though I had to use a Pillsbury cake mix! Coconut milk only comes in 13.5 oz. cans, but that seemed to work OK. This would be a great recipe for a beginning cook as you do not have to whip the egg whites. It looks just like the picture! I would make it again.
