Made these for my Mom for her birthday and she loved them! I used a chocolate chip on top instead of the cherry. I lined the cookie sheets with foil and found that a lot of them were sticking or ripping the foil trying to get them off. I will use parchment paper next time. Macaroons aren't the easiest cookies to execute, but worth it in the end!

Took me a couple tries to get it right (when they say DO NOT UNDERBEAT, they mean it; besides its a good workout for your arm if you''re using a hand mixer like I do). But they were phenomenal (even my mess-ups were tasty). I used a variety I found in one of the BC cookbooks (1/4 tsp mint extract and 6 oz chocolate chips- -I used minis- -and omit coconut).

When I made this recipe, I was only looking for cookies to add variety to the present selection of cookies I make for my Christmas cookie trays. Actually,I don''t like either meringue or coconut; but tasting these cookies after they were completely cold brought an amazing surprise. The cookie melts in your mouth and emits the wonderul combination flavor of the coconut and almond. This cookie will be a permanent addition to my tray.
