Classic French Salad

Ingredients

  • 4 cups mixed salad greens
  • 3 cups sliced, cooked new red potatoes, unpeeled
  • 3 cups cooked cut green beans
  • 3 hard-cooked eggs, quartered
  • 2 medium tomatoes, cut into wedges
  • 1 can (5 oz) tuna or 1 can (4.5 oz) chicken, drained, flaked
  • 1/2 cup pitted ripe olives
  • 1/3 cup bacon flavor bits or chips
  • 1 cup olive oil vinaigrette dressing

    On extra-large serving platter, arrange all ingredients except dressing. Just before serving, drizzle with dressing.

  • This Classic French Salad recipe, containing potatoes, beans, cooked eggs, tomatoes, olives and tuna, is inspired by the classic French Niçoise salad.
  • To cook new red potatoes, leave whole and place in saucepan. Add water to cover potatoes, then boil, uncovered, 15 to 20 minutes or until tender. Cool potatoes before slicing.
  • For foolproof hard-cooked eggs, place eggs in a medium saucepan and add cold water to at least 1 inch above eggs. Heat water to boiling; remove from heat. Cover and let stand 20 minutes, then immediately place eggs in cold water to cool. If preferred, you can purchase hard-cooked eggs in the deli or dairy section of your grocery store instead.
  • Serve Classic French Salad with additional olive oil vinaigrette dressing on the side.
