Classic Cookie Frosting
envelope plus 2 teaspoons unflavored gelatin
cup cold water
cup granulated sugar
cups powdered sugar
teaspoon baking powder
Sprinkle gelatin on cold water in 2-quart saucepan to soften; stir in granulated sugar. Heat to a rolling boil; reduce heat. Simmer uncovered 10 minutes. Pour hot mixture over powdered sugar in large bowl. Beat about 2 minutes with electric mixer on medium speed until foamy. Beat in vanilla, baking powder and salt on high speed 12 to 15 minutes or until soft peaks form.
