Ingredients

1: envelope plus 2 teaspoons unflavored gelatin

1: cup cold water

1: cup granulated sugar

2 1/4: cups powdered sugar

1 1/2: teaspoons vanilla

1: teaspoon baking powder

1/8: teaspoon salt

Directions

1 Sprinkle gelatin on cold water in 2-quart saucepan to soften; stir in granulated sugar. Heat to a rolling boil; reduce heat. Simmer uncovered 10 minutes. Pour hot mixture over powdered sugar in large bowl. Beat about 2 minutes with electric mixer on medium speed until foamy. Beat in vanilla, baking powder and salt on high speed 12 to 15 minutes or until soft peaks form.
