This is the classic made-from-scratch sweet potato recipe. It's easy and can be completely cooked on top of the stove.

The old recipe I remember from my mom's cookbook is similar but I agree it was different. 3 Tablespoons cream, 3 Tablespoons real butter and 1/2 cup of brown sugar. I continue to make this year after year - it's the best. I usually use the canned drained sweet potatoes/yams but have also cooked my own, both are great and the finished product is the same. I heat the butter and cream then add the sugar to dissolve and stir in the potatoes to heat through and coat with sauce. Put all in casserole and top with marshmallows. Bake 350 till nicely browned on top. If I use two cans or the large tall can of yams, I just double the recipe - perfect!

I had to join just to say I AGREE, the original edition is the best. I inherited my Mom's SECOND EDITION and the recipes are far better than the modernized versions. Come on, reissue the old version! Butter, cream and pork fat rule!!! Better to eat less, but all natural and less tasty than rely on margarine and other modern shortcuts.

I totally agree with janedoe99 - many of us would like the old edition (1970's) reissued. Mine is in tatters!

This is not the Betty Crocker classic candied yams recipe. The real one calls for cream, not water, and butter, not margarine. I am disappointed that I can not find a classic older Betty Crocker cookbook. I will NEVER buy the new one. I don't like the page layout or the brown colors of the new one. I want the old Betty Crocker cookbook. Like Joy of Cooking, Betty Crocker needs to reissue their older cookbook from the 1970s. It was the best one. Disappointed in the recipes on this website.

This is my husbands favorite. I also use Splenda brown sugar and add 1/3 cup of chopped pecans. It is delicious and healthy!
