I love the citrus flavors! I like this spin on a classic shortbread cookie. I had to put an extra half a stick of butter in this to get the doughy consistency I was looking for though. I also didn't have enough limes for the juice, so I used lemons and oranges instead, still turned out great. I would recommend putting these in for 11-12 minutes, then take them out to cool on the cookie sheet. They will still look light in color, but will continue to bake as they sit on the cookie sheet. Anymore than 12 minutes they are too crunchy. I also added a bit of extra orange-lemon juice to the powdered sugar to give a thinner consistency. Overall, these were delicious! I am making these for Mothers Day! These are very light and a great little burst of Spring for your mouth!
