Ingredients

Biscotti

box Betty Crocker® SuperMoist® lemon cake mix
1/2
cup Gold Medal® all-purpose flour
1
tablespoon vegetable oil
2
eggs
2
tablespoons grated lemon peel
1
tablespoon grated lime peel
1
tablespoon grated orange peel

Easy Lemon Glaze

1/4
cup Betty Crocker® Rich & Creamy lemon frosting
2
to 4 teaspoons lemon juice

  • 1 Heat oven to 350°F (325°F for dark or nonstick pan). Lightly grease or spray large cookie sheet. In large bowl, mix biscotti ingredients with spoon until dough forms.
  • 2 On cookie sheet, shape dough into 14x3-inch rectangle, 1/2 inch thick. Bake 19 to 25 minutes or until golden brown. Cool on cookie sheet on cooling rack 15 minutes.
  • 3 Cut dough crosswise into 1/2-inch slices. Arrange slices cut side up on cookie sheet. Bake 7 to 8 minutes or until bottoms are light golden brown; turn slices over. Bake 7 to 8 minutes longer or until bottoms are light golden brown. Cool 5 minutes; remove from cookie sheet to cooling rack. Cool completely, about 15 minutes.
  • 4 In small bowl, mix glaze ingredients until thin enough to drizzle. Drizzle over biscotti. Before stacking biscotti, let stand about 4 hours or until glaze is set. Store loosely covered.

You will need 2 medium to large lemons, 1 large lime and 1 medium orange for the grated peel needed for these fresh-tasting crisp cookies.

Skip the Easy Lemon Glaze, and dip half of each cookie into melted white chocolate or vanilla-flavored candy coating. After dipping cookies, place them on a cooling rack until the chocolate is set.

i made this recipe last night and everyone liked it. i could not get the dry dough to form a ball without falling apart so i added a little water which added on to the baking time. i will make this again.

I've never made Biscotti before so after reading the recipe I was concerned about not having enough wet ingredients so I used a cereal bowl to mix the zest and oil together, then added the eggs and mixed well. In a medium bowl I poured the lemon cake mix and created a trough then slowly added the wet ingredients. Using a small rubber spatula, the dough worked into a rough ball quickly. I didn't use my hands until forming it on the pan. Enough dry ingredients was left to scrape onto the dough ball to easily work with the dough. I didn't find this nearly as sticky as a biscuit dough. I followed rest of directions as given. Very flavorful.

This recipe has the potential to be good, I just made it to the exact specifications and I'm finding that the mixture was too sticky and moist for biscotti. I think the next time I make it I am going to add some all-purpose flour to thicken the dough. Though the finished product didn't end up turning out right, the bars are very flavorful and delicious! I will definitely try again because I know they will end up being great after a few tweaks! Plus with few ingredients and the easy recipe its a no-brainer for any baker new to pro!
