Circle of Moms Pizza Chicken
lb boneless skinless chicken breasts cut into bitesize chunks
cup white flour
cup italian bread crumbs
sea salt & pepper to taste
24 oz bottle Marinara Sauce
cup shredded mozzarella cheese
cup parmesan cheese
tbsp extra virgin olive oil
In shallow dish combine flour, bread crumbs and salt and pepper. Add pieces of chicken breast and coat well with mixture. Shake off excess flour mixture and set chicken aside.
Heat olive oil in a large saute pn ove medium high heat. Add chicken breast peices and lightly brown on all sides. Place chicken in a baking dish sprayed with non stick spray and spread in an even layer.
Add marinara sauce and top with morarella and parmesan. Bake at 350 degrees for 25 - 30 minutes or until lightly golden and bubbly. Serve with your favorite pasta and vegetables.
