Garden full of zucchini? Make bread. You can have it in the oven in 15 minutes, and you can store it in the freezer for a couple of months.

This recipe works great with any type of summer squash, as well as zucchini. The more cinnamon applesauce you substitute for oil, the moister the bread will be. However, it seems that using applesauce increases the cooking time slightly. I think brown sugar is great instead of white sugar, and using a little extra helps give more flavor. The bread can be made with or without the topping, which I found to be difficult using 'cold butter'. That may just be due to the type of butter I use though. Also, the '15 minute prep time' certainly does not include the time it take to shred the zucchini/squash! :) Overall, this is a really rood recipe and I've made it several times.

Really disappointed in the bread. I followed the recipe exactly and it was very dry. It's edible if heated in the microwave a few seconds.

Love this recipe, not only does the house smell amazing but the bread is moist and full of flavor as well. Tried the applesauce, great idea! I also added some raisins and chopped pecans for a little extra,

Made this for the office and was a big hit! Really easy to make. Did the applesauce trick also to make it alittle healthier. Will make this again. :)

I love this bread! so does my family. i have a 3 yr old who is the pickiest eater and yet he LOVES this bread, he says its candy. I have a 4 mo. old who is always wanting to be in my arms and it didnt take long to make which is great!!

I thought this bread was delicious! It was moist and sweet and the topping on top was a very good addition. I also used half apple sauce and half oil and it turned out wonderful! I have had a lot of zucchini bread, and this is one of my favorites!

I used half vegetable oil, half applesauce instead of all the oil called for. I also used half regular flour and half whole wheat. Next time I will use a little less salt than called for in the recipe. I could definitely taste the salt which was strange!I would make this again and tweak the recipe just a little bit more. The recipe is OK, I've had better zucchini bread!
