Cinnamon-Pear Oatmeal with Toasted Walnuts

Ingredients

can (15 oz) pear halves in juice

cups old-fashioned or quick-cooking oats
1/2
teaspoon ground cinnamon
1/4
teaspoon salt
1/3
cup chopped walnuts, toasted*
1/4
cup packed brown sugar

cup fat-free (skim) milk

  • 1 Drain pears, reserving juice in 4-cup measuring cup. Add enough water to juice to measure 3 1/2 cups liquid. Chop pears; set aside.
  • 2 In 2-quart saucepan, heat juice mixture to boiling. Stir in oats, cinnamon and salt. Cook over medium heat about 5 minutes for old-fashioned oats (about 1 minute for quick-cooking oats), stirring occasionally. Gently stir in chopped pears.
  • 3 Spoon oatmeal into serving bowls. Top with walnuts, brown sugar and milk.

Expert Tips

*To toast nuts, bake uncovered in ungreased shallow pan in 350ºF oven 6 to 10 minutes, stirring occasionally, until golden brown. Or cook in ungreased heavy skillet over medium-low heat 5 to 7 minutes, stirring frequently until browning begins, then stirring constantly until golden brown.
