I made these tonight but made them into regular size muffins. I used Splenda rather than sugar. To avoid a high fat content I sprinkled the Slenda and cinnamon onto the top. They are simply delicious and my substitutions made no difference in taste.

I'm sorry to say that these were really disappointing... I added extra orange peel because I got carried away and had an extra teaspoon. The batter seemed a little dry to me so I also added 1 T. OJ. There was hardly any orange flavor in my muffins. I would not have known they were orange muffins if I hadn't made them myself. The best part was the cinnamon sugar on top. I don't plan of keeping this recipe as I won't make them again.

I've been looking for a muffin recipe like this for a long time. Just tried this one. It is great and oh so easy to make. They taste good hot or cold. We like to take them with us for our lunches, if any last that long. Have made these several times since finding this recipe. Keep up the good work. Thank you for all your hard work getting these recipes to us. Looking forward to more great recipes from you.

Yum, yum. Excellent recipe. Very tasty and super easy. Fix it in 5 minutes. Delicious warm or cold. Will sure make it again. The only thing is that I found that there is no need to melt 1/2 cup of butter to dip the muffins in. 1/4 cup is enough. I ended having lot's of melted butter, but that is no big deal, I will use them in any dish.

These are very good! when they are warm they go great with a glass of milk. I made a mistake and used a whole stick of butter in the batter but they turned out alright. I might try lemon peel next but they are very good with orange peel. :)
