Ingredients

Coffee Cake

  • 1 3/4 cups all-purpose flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup buttermilk
  • 1/3 cup butter or margarine, melted
  • 1 teaspoon vanilla
  • 2 eggs, beaten

Topping

  • 1/4 cup butter or margarine, melted
  • 3 tablespoons sugar
  • 1/2 teaspoon ground cinnamon

Steps

  • 1
Heat oven to 350°F. Grease bottom only of 9-inch square pan with shortening or spray bottom with cooking spray. In large bowl, stir coffee cake ingredients with spoon just until dry ingredients are moistened. Spread batter in pan.
  • 2
Bake 30 to 40 minutes or until toothpick inserted in center comes out clean.
  • 3
Generously pierce hot cake with fork. Brush or drizzle 1/4 cup melted butter over hot cake. In small bowl, mix 3 tablespoons sugar and the cinnamon; sprinkle over hot cake. Serve warm.

  • Warm from the oven, this coffee cake tastes like homemade cake doughnuts.
  • To substitute for buttermilk, measure 2 1/4 teaspoons vinegar or lemon juice into a 1-cup measuring cup; add enough milk to make 3/4 cup.
