Cinnamon-Apple Chex® Mix (1/2 Recipe)

Ingredients

cups Wheat Chex® cereal
1/2
cup lightly salted whole almonds
2
tablespoons butter or margarine
3
tablespoons packed brown sugar
1
tablespoon light corn syrup
1/2
teaspoon ground cinnamon
1/2
cup chopped dried apples
1/4
cup vanilla yogurt-covered raisins

  • 1 In medium microwavable bowl, mix cereal and almonds.
  • 2 In microwavable measuring cup, microwave butter, brown sugar, corn syrup and cinnamon uncovered on High 45 to 60 seconds, stirring halfway through microwave time, until mixture is boiling; stir. Pour over cereal mixture, stirring until evenly coated. Microwave uncovered on High 2 minutes, stirring and scraping bowl after 1 minute. Stir in apples; microwave uncovered on High about 1 minute or until apples just begin to brown on edges.
  • 3 Spread on waxed paper or foil to cool, about 5 minutes. Place in serving bowl; stir in raisins. Store in airtight container.

i made this chex mix for my son's halloween party at school as the 'healthy snack'. it was a hit! the kids, parents and teachers were asking for more! everyone loved it! it had just enough 'sweet' to make it appealing against all the candy they were getting anyhow. i did change the recipe a bit, using the whole box of chex and increased the butter to 3 Tbs and a little extra corn syrup. i also left out the nuts, since it was at school. it was great! i'll definatly make it again!
