Ingredients

Cupcakes

box Betty Crocker® SuperMoist® devil's food cake mix

cup sour cream
1/2
cup milk
1/3
cup vegetable oil

eggs

to 2 teaspoons butter flavor or vanilla

heaping tablespoons unsweetened baking cocoa

cup chocolate chips (6 oz)

Cream Cheese Icing

package (8 oz) cream cheese, softened
1/2
cup butter or margarine, softened
3 1/2
to 4 cups powdered sugar
1
to 2 teaspoons butter flavor or vanilla

Directions

  • 1 Heat oven to 350°F (325°F for dark or nonstick pan). Place paper baking cup in each of 24 regular-size muffin cups.
  • 2 In large bowl, beat all cupcake ingredients except chocolate chips with electric mixer on medium speed about 2 minutes, or until well blended. Stir in chocolate chips. Divide batter evenly among muffin cups.
  • 3 Bake 18 to 24 minutes or until toothpick inserted in center of cupcake comes out almost clean. Cool 10 minutes; remove from muffin pans. Cool completely.
  • 4 In medium bowl, beat cream cheese and butter with electric mixer on medium speed until well blended. Beat in powdered sugar until smooth. Beat in butter flavor until icing is creamy. Place in decorating bag fitted with tip; pipe large swirls on tops of cupcakes. Top with chocolate curls. Store covered in refrigerator.

"Let kids go down the list of ingredients and help you gather everything from the pantry. The youngest always gets the job of placing the cupcake liners in the pan. This will make them feel important while the oldest gets to measure out ingredients. I let my oldest pour the measured ingredients in and then my youngest gets to add chocolate chips once she is done with the cupcake liners. Turn the oven light on once you have them in the oven so everyone can watch! My youngest has been known to pull up a chair and sit there watching during the whole "show"! I make the icing, and the kids are both taste testers to make sure it’s good enough for their cupcakes. Give each child a bowl of icing and a butter knife and let them ice their cupcakes, providing chocolate sprinkles and chocolate chips to use as decorations. These were the BEST chocolate cupcakes I have ever tasted, and everyone that I made them for agreed. There are 2 things I did differently because I did not have 2 ingredients. Instead of the sour cream, I used plain greek yogurt. When I made the frosting, I thought I had enough powdered sugar, but I ended up only having half of what I needed. SO, I mixed only half of the butter/cream cheese with powdered sugar, and the other half with 1/2-3/4 can of the chocolate frosting I had originally bought to go along with the cake mix. Those ended up being like a chocolate cream cheese cupcake and THOSE are the ones everyone liked the best. I am making more right now for Teacher/Nurses week. :D

I made these yesterday and I have to say they are even better today after being in the fridge over night. SO yummy! :) Love semi-homemade recipes. This is my new favorite treat! p.s. I used sugar free chocolate chips to lower the sugar amount and they were still awesome.
