Chocolate Raspberry Triangles

Ingredients

cups Gold Medal® all-purpose flour
3/4
cup sugar
3/4
cup butter or margarine, softened
1
package (10 oz) frozen raspberries in syrup, thawed and drained
1/4
cup orange juice
1
tablespoon cornstarch
3/4
cup miniature semisweet chocolate chips

  • 1 Heat oven to 350°F. Mix flour, sugar and butter. Press in ungreased 13x9-inch pan. Bake 15 minutes.
  • 2 Mix raspberries, orange juice and cornstarch in 1-quart saucepan. Heat to boiling, stirring constantly. Boil and stir 1 minute. Cool 10 minutes. Sprinkle chocolate chips over crust. Carefully spread raspberry mixture over chocolate chips.
  • 3 Bake about 20 minutes or until raspberry mixture is set. Refrigerate about 1 hour or until chocolate is firm. For triangles, cut into 4 rows by 3 rows, then cut each square into 4 triangles.

These smell amazing and tasted pretty good. I plan to cook the crust an extra 3-5 minutes and add more raspberries. If you don't have mini-chocolate chips, be sure to stir the chips into the topping, rather than trying to place on crust and add the raspberries on top.

I used fresh raspberries instead of frozen w/ syrup and it turned out WAY too tart. If I try again, will add sugar to the raspberry topping.

Easy and great taste and presentation. Dark choc. and raspberries are too yummy! These bars were a real hit with the guys. The only thing to note is Do Not use an air cushioned pan as the pastry layer will be undercooked after refrigeration
