Ingredients

cup granulated sugar
1/2
cup butter or margarine, melted
3/4
cup milk
1
egg
1 1/2
cups Gold Medal® all-purpose flour
1
cup chopped pistachio nuts
1/2
cup semisweet chocolate chips
1/3
cup unsweetened baking cocoa
2
teaspoons baking powder
1/4
teaspoon salt
Decorator sugar crystals, if desired

Directions

  • 1 Heat oven to 350°F. Grease bottom and sides of 9x5-inch loaf pan with shortening.
  • 2 In large bowl, mix granulated sugar, butter, milk and egg until well blended. Stir in remaining ingredients except sugar crystals. Pour into pan. Sprinkle with sugar crystals.
  • 3 Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan to wire rack. Cool completely, about 2 hours, before slicing.

Tasty, very sweet and chocolatey. And yes, a bit dry. Only grease the bottom of the pan and, as with all quick breads, you won't get that ridge around the top of the sides of the loaf. See it in the photograph? Look at other recipes of quickbread at this website, observe the lack of a ridge on the photographed loaf, and then note the directions state to grease only the bottom of the pan.

Although the bread was good it seemed a bit dry to me. A lot like overdone brownies. (I would bake it less the next time)
