Chocolate Pancakes with Strawberries

Come and get 'em! Yummy pancakes made with chocolate soymilk and topped with berries and yogurt make a great day starter.

Ingredients

cup light chocolate soymilk
1/4
cup fat-free egg product
1
tablespoon canola or vegetable oil
3/4
cup Gold Medal® all-purpose flour

tablespoons sugar
2
tablespoons unsweetened baking cocoa
1
teaspoon baking powder
1/8
teaspoon salt
1
cup sliced fresh strawberries
Sliced banana, if desired
Yoplait® Original 99% Fat Free French vanilla yogurt, if desired

  • 1 In medium bowl, beat soymilk, egg product and oil with wire whisk until smooth. Stir in remaining ingredients except strawberries, banana and yogurt.
  • 2 Spray griddle or 10-inch skillet with cooking spray; heat griddle to 375°F or heat skillet over medium heat. For each pancake, pour slightly less than 1/4 cup batter onto hot griddle.
  • 3 Cook pancakes until puffed and dry around edges. Turn and cook other sides until golden brown. Serve with strawberries, banana and yogurt.

The recipe was very easy to make. I had all the ingredients available, except I substituted a whole egg for the egg substitute and regular soy chocolate milk for light soy chocolate milk. I added no toppings to the pancakes -- just ate them plain. They had a good taste. The only problem I had was following the advice of heating the pan. I burned a couple of the pancakes. I had to lower the heat to medium-low.

These pancakes are really good. Very chocolately! I even put some whipped topping on it I did not have any chocolate soymilk, and did not want to go to the store, so I substituted regular chocolate skim milk. It worked very well.

My boys and I love this one! These pancakes make any day special. Peanut butter & chocolate syrup is great for those of us who like to mix our chocolate with some peanut butter:) My boys want to try their own variations to add their favorites to these delicious pancakes.
