From Betty's Soul Food Collection... This rich, decadent cake combines two favorite flavors. The minty glaze is—you guessed it—icing on the cake!

I made this for Christmas in a wreath cake pan and it was delicious. The filling kind of swirled through the middle and was great. I garnished it with cherries.

I'm making this for Valentine's Day dessert, but substituting Cherry extract for the mint, and red food coloring instead of green. Just saw the reviews after popping it in the oven...I was wondering about the filling....hopefully it turns out well, otherwise I'm redoing it with the 1/2 batter-filling-1/2 batter method. Thanks!!

I am a 35 year old refinery worker in southern Louisiana. I never cook anything. I made this cake for my wife's birthday on November 19, 2011 and everyone loved it. They all requested that I make it again the following week for Thanksgiving desert. I followed the directions and it was really simple. What I did was poured half of the cake mix into the pan and made a little channel in the middle with a spatula. I used a decorating bag to squirt the filling into the channel then covered it with the second half of the cake mix. it came out just like the picture. The other thing I did on the second cake was I used only 2 teaspoons of water in the glaze to make it a little thicker. I plan on trying other recipes in the future because this was pretty fun. My wife laughed at me and called me Mr. Betty Crocker, but she sure didn't stop eating my cake.

This cake was really easy to make. Of course it didn't look like the picture, but it tasted great, was still nice and moist and the family agreed. I too liked the idea of pouring part of the cake mix, then the filling and then the rest of the cake mix. I also put the filling in a small bag and piped it in. What I got was a thin U shaped line of green throughout the cake. My mint topping (I skipped the chocolate topping) dissapeared into the cake. As long as you don't show anybody what it should look like, they will think it's a work of art :)

This cake was delicious! However, next time I would leave out the chocolate on the glaze, it really seemed to be too much.

Delicious!!!! Very easy to make! Just make sure your cake is completely cool before adding the glaze, I was pressed for time and the the coating slid off and created a green puddled lake around the cake. Not so pretty, but still tasted great!

I have made this cake several times now and everyone loves it. It is very moist and in my opinion has just the right amount of peppermint taste...it is so delicious! It is also very easy to make.

I made this cake years ago (this recipe was in the monthly magazine) and recall the challenge to get the filling to swirl or at least be centered. I'd like to make this cake again but do you have any tips for success with this? Based upon the reviews, several others have also had a problem. Also, are these recipes ever updated to reflect the times? Cream cheese is typically sold in 4 oz packages now and many people no longer cook/bake with shortening.

Hi Lori2000A: I just confirmed the answer with the kitchens and what we posted is correct. The recipe needs 2 packages (3 oz each). Sincerely, Cate
