Love these! I double the batch and make one with chocolate on the outside and one with mint on the outside. I hate rolling, so i put the dough in a gallon baggies and pound it flat with my hand. (Filling the bottom of the bag going about 10 inches up the side. Use the ruler to measure and then "even out " the edge.) Do this with both then refridgerate for about an hour. Carefull cut the baggie off and you have two perfectly matched rectangles! No mixer, no rolling pin!

This recipe was great! My daughter and I worked together to do this. I used Peppermint extract and the taste was perfect and not over-powering. I've never rolled my own cookies and cut them like this. I wanted to make more just to store in the freezer for those last minutes snack needs.

This was good. If you bake them to long the green mint goes away completely and you have a sugar cookie color. You really werent able to taste the chocolate that much but maybe thats because I used hot cocoa mix instead of unsweetened cocoa powder. I didnt use wax paper so i used flour for one batch and it didnt stick after firming up in the freezer but after they were baked it was fine.

Wow! Not only are these delicious but super easy to make. The only cookies I've made before are with premade cookie dough and I've never used a rolling pin for anything! I used the suggestion to add more cocoa & extra green coloring. My cookies turned out fantastic! Can't wait to suprise my family with cookie tins at Christmas :)

Advice to the person who said they were kind of hard - you might have sliced them too thin. I make these all the time and they can be hard if you slice them too thin.

These were not too hard to make. I did not have wax paper though, so I rolled out separately the mint and then the chocolate and then laid them on top of each other and made the two a little more even. I just rolled it with my hand then. I burned the first batch, oopsy. The second batch came out perfect. I can taste the mint perfectly. But I think next time I will add a little more chocolate. I couldn't really taste that. Otherwise, all good!

I think a key to making sure they are not hard is to use room temp (not melted) butter (not margarine), don't cut them too thin and not to overbake. We reversed how we rolled them and it is fun to see how different green/chocolate outside can look from chocolate/green outside. Yum!

These cookies were easy to make and looked amazing! I got a lot of comments on how great they looked and tasted but they got very very crunchy. Great taste and appearance but lots of crunch, I thought they would be softer.
