This is a good recipe. It also works well for other variations. I made them yesterday with orange extract, using a full teaspoon of extract since it is not as strong as mint tends to be and tinted it orange as well. They were a huge hit! I also lined my pan with parchment paper so that I could transfer the cooled brownies to a tray before spreading the filling on them and then adding the the chocolate top layer once it was lightly set. Then I set it out in my cold garage to set. That made cutting them much easier than in the baking pan. Yum!

AWESOME brownies. They are time intensive, however, to let each layer set up. But I do recommend them. Added one extra drop mint and extra drop food coloring. Everyone loved them!

I made this dessert with the Betty Crocker Gluten Free and it came out fine but you really have to grease your pan!!! I added a 1/2 teaspoon of the mint extract because when I first tasted the filling it wasn't minty enough and they came out really good!!

This recipe has changed significantly since I printed it in March 2010 - the filling contents have been reduced by 1/3, presumably to favor the comments made about it being too much like frosting. I'll make this version, too, but like the "heavier" one a lot. These are very rich, but don't we deserve a rich dessert once in a while? I've shared these with several different groups, and their approval has been unanimous! It is a definite FIVE SPOON for me!

My step mom used to make these for us when we grew up and I have been looking all over the place for a recipe for them..I made them for an AA function and they were a hit!!!!! Very yummy and addictive

These are the best! I thought the process was a pain while making them the 1st time but as soon as I tasted them I told my husband and kids that these brownies were worth every SECOND it took to make them...Now understand I'm not a big fan of loads of time in the kitchen cooking or baking so don't let my thinking the process was a pain keep you from trying these fabulous brownies....if you like chocolate and mint I think you will really like these. YUMMY!

Everyone loved these today. I encouraged people to eat them quickly because I'm wary of leaving them out too long with the cream and cream cheese. They're a little too rich for my taste.
