I loved these cookies. They were a little difficult to make appearance wise (my mallow center was runny) but everybody loved the way they tasted! Will probably make them again for Valentine's Day or for some sort of occasion!

Gingerbread Modification! I had already purchased a pouch of the gingerbread cookie mix before I saw this recipe. I used it instead of the sugar cookie mix and omitted the cocoa. Instead of the filling, I bought a can of cream cheese frosting and used it instead. I also didn't bother with the topping. I followed all the other directions and they are yummy!

These are easy to make and taste great; however, next time I will make half again the amount of marshmellow filling because the filling was good but turned out to be a little "skimpy".

I made these for our family Easter - they were a big hit! Everyone wanted the recipe. They couldn't believe they were so easy to make. It is now one of my new favorites!
