Ingredients

Cookies

cup sugar
1
roll (30 oz) refrigerated gingerbread cookies
1/4
cup baking cocoa

Filling

4
cups powdered sugar
1/2
cup butter, softened
2
teaspoons vanilla
2
to 3 tablespoons milk

  • 1 Heat oven to 350°F. In small bowl, place sugar.
  • 2 In large bowl, break up cookie dough. Stir or knead in cocoa until well blended. Shape dough into 64 (1-inch) balls. On ungreased cookie sheets, place balls 2 inches apart. Press each flat, with smooth-bottomed glass dipped in sugar.
  • 3 Bake 6 to 9 minutes or until cookies are set. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely, about 20 minutes.
  • 4 In medium bowl, beat filling ingredients with electric mixer on medium speed until light and fluffy. Spread about 2 heaping teaspoons filling between bottoms of pairs of cooled cookies.

This recipe flopped for me. Not sure where I went wrong. The cookies themselves tasted OK apart from the fact that I baked them 1 minute longer than necessary and the bottoms were darker than I prefer. The filling is where it all went awry. Despite waiting until the cookies were completely cooled to even start making the filling and adding every liquid teaspoon by teaspoon until it was the proper consistency, as soon as it went on my cookies in sandwich form, it all spread out and soon I was left with a filling coated cookie with a sad cookie topper instead of a sandwich cookie. I won't be making these again, or at least not in sandwich form. Instead they'll just be chocolate gingerbread cookies sans filling.
