This recipe flopped for me. Not sure where I went wrong. The cookies themselves tasted OK apart from the fact that I baked them 1 minute longer than necessary and the bottoms were darker than I prefer.
The filling is where it all went awry. Despite waiting until the cookies were completely cooled to even start making the filling and adding every liquid teaspoon by teaspoon until it was the proper consistency, as soon as it went on my cookies in sandwich form, it all spread out and soon I was left with a filling coated cookie with a sad cookie topper instead of a sandwich cookie.
I won't be making these again, or at least not in sandwich form. Instead they'll just be chocolate gingerbread cookies sans filling.
