Super easy to make. Instead of adding extra butter, I just reduced flour by 1/4 cup. Worked perfectly. Chilled dough a few minutes and rolled out between waxed paper. I made large shortbread sticks so only got 2 dozen. 1/2 cup of melted chips was plenty to just dip the ends.

This was the first shortbread cookie recipe I ever made and it turned out wonderfully. I did have to add the extra 3T of butter to get the dough to work together. I also didn't dip them in chocolate just kept them plain and used a cookie press to shape. Everyone loves these and I will make them again!

Delicious! They tasted and had the flaky texture of real Scottish shortbread! I made some with the chocolate and some without. Either way, both kinds are delicious!

It's easy to do and they taste great. I made them for my nieces birthday party and they were a hit. I used a flower cookie cutter and before I baked them I put pink and purple sugar sprinkles on them. Perfect for a little girls party! I also did the chocolate on some and they went fast!

I have made this recipe several times since finding it on this site. It is one of the standards that I now use for the "wow" factor. I have one question, though. Was anyone else able to make more than 2 dozen cookies when following this recipe? I cannot seem to get near the four dozen number the recipe says it can make. Also I wanted to say that when I roll these out I use two sheets of parchment paper instead of flour, and I have no problem with sticky dough. In fact it is easy to clean up too! Thanks again, Betty!

I ahve tried this recipe before and lost it so I came back to get it and just wanted to post how I am going to mix this recipe up for christmas this year...I am going to add crushed candy canes to the dough and also sprinkle a few on the chocolate dipped side. I know it would be good with toffee bits too! I can't wait to start baking YUM!
