A layer of penuche creates frosted chocolate cupcakes reminiscent of a delicious mini layered cake.

I decided to make these cupcakes for my dads birthday and to be quite honest, I didnt love them. The only person that actually "liked" these were my Dad. Before you make these make sure you know that it has a very mature flavor that not many people enjoy. It was a good cupcake- as all of Betty Crocker's are, but the frosting was much to strong for everyone else.

My husband is gletun free and I am not and I am often disappointed in the taste of certain gletun free products. Carol's flour blend and her recipes are amazing and you can't even tell that you are eating gletun free! The cheesecake recipe is AMAZING best cheesecake I have EVER had EVER. Such a good selection of dessert recipes, I have no reason to ever bake with gletun again!

These cupcakes look like such a great idea...but I'm having no end of trouble with the frosting. Followed the recipe to a T but the frosting refuses to set even though I've left it in the fridge overnight and just falls off the cupcakes. Now, this is probably entirely my fault so I will be attempting these again. For now, I've managed to salvage the situation by scooping a small amount of the 'frosting' into each cupcake as a filling and then spreading a thin layer on top as a sort of glaze. I do agree with the other members though - adding some sort of coffee flavouring would really make this recipe pop!

These were great. I made these for my daughters sports banquet and they were a hit! I piped the frosting in the center and the top by cutting a corner off a plastic bag and they looked professional. They were easy to make; just make sure you allow time because they are time consuming since the brownsugar/butter has to be cool for the frosting to turn out. Not too sweet I guess for girls that spend 2 hours twice a day in the pool. I added some chocolate dipped strawberries to the plate and it made a wonderful presentation.

Does anyone know if we can use half & half or Heavy cream instead of milk?

I'm betting these would be AWESOME with either some cappuccino coffee powder added to the filling in lieu of all the powdered sugar (which if cut back & refrigerated longer than called for still works, and isnt so SWEET ) OR even dissolve some instant coffee granules in a very small amount of water, and sub it for some of the milk called for in the filling

These cupcakes were really good! I only used 2 cups of powdered sugar and it was plenty sweet! I let the butter/brown sugar mixture cool longer and didn't have problems with the consistency. Will Definitely make it again! (maybe even try the 2 layer cake idea another reviewer mentioned)

I made these as mini cupcakes and got 40 bitesized pieces of heaven..I worked in a candy store for 5 years and my weakness was the penuche fudge..these brought me back, i'll tell ya! I cooked the mini's for 14 minutes and used a ziplock bag to pipe in the frosting, which made the process go more smoothly. I put the mixture in the frige for about 45 minutes before I mixed in the sugar and didn't have a problem with the consistency. These are my new favorite cupcake and I plan to make them again soon..and often! Thank you!

I made this recipe as a two layer cake for a birthday party and it was a huge hit. The key with the frosting is to let it cool longer than recommended so it is thick and caramel-like. I will use this one again:)
