Chocolate Chip Streusel Cake

Ingredients

Coffee Cake

cup Gold Medal® whole wheat flour
1/2
cup Gold Medal® all-purpose flour
3/4
cup granulated sugar
3/4
teaspoon baking powder
1/2
teaspoon salt
1/4
teaspoon baking soda
1/2
cup cold butter or margarine, cut into pieces
2/3
cup buttermilk
1
teaspoon vanilla
1
egg
1/2
cup miniature semisweet chocolate chips

Streusel

1/3
cup Gold Medal® whole wheat flour
1/3
cup packed brown sugar
1/4
cup cold butter or margarine
1/4
cup chopped walnuts

Directions

  • 1 Heat oven to 350°F. Grease bottom only of 8-inch square pan with shortening or cooking spray.
  • 2 In large bowl, mix 1 cup whole wheat flour, the all-purpose flour, granulated sugar, baking powder, salt and baking soda. Cut in butter, using pastry blender or fork, until mixture is crumbly. Add buttermilk, vanilla and egg; stir until well blended. Stir in chocolate chips. Spread in pan.
  • 3 In small bowl, mix streusel ingredients with fork until mixture is crumbly. Sprinkle over batter.
  • 4 Bake 35 to 45 minutes or until toothpick inserted in center comes out clean. Serve warm or cool.

I got tired of watching my kids eat chips for snack everyday. So, I decided to make this recipe. They loved it. My daughter said it was the best cake she ever had. I like how it sneaks in whole wheat flour, making it healthier. I don't have a pastry blender so I just melted the butter and stirred it in the batter. I cut it in with knives for the topping to keep that crumbly texture. I will definitely make this again.
