Ingredients

cup semisweet chocolate chips (6 oz)
1/2
cup coarsely chopped pecans
1/2
cup packed brown sugar
1/2
teaspoon vanilla
1/8
teaspoon salt

eggs
1
pouch (1 lb 1.5 oz) Betty Crocker® chocolate chip cookie mix
1/2
cup butter or margarine, softened
Powdered sugar

Directions

  • 1 Heat oven to 350°F. Spray 36 mini muffin cups with cooking spray. In medium bowl, mix chocolate chips, pecans, brown sugar, vanilla, salt and 1 of the eggs until blended. Cover and refrigerate.
  • 2 In large bowl, stir cookie mix, butter and remaining egg until soft dough forms. Shape dough into 36 (1-inch) balls; place in muffin cups. Bake 8 minutes or until edges are set.
  • 3 Spoon chilled chocolate chip mixture evenly over baby cakes. Bake 8 minutes longer. Cool 5 minutes; remove from pans to cooling racks. Cool completely. Sprinkle with powdered sugar.

Made these with walnuts and people are loving them! Will make with pecans next time. Also, only made 32 so I will try to stretch out dough more next time because there was too much topping. Switched first 8 min of cooking to 9 min 30 seconds to account for size. Will make smaller and take more care with getting the topping in the middle so they will look there prettiest. Didn't sprinkle with powdered sugar at the end
