cups mashed very ripe bananas (2 to 3 medium)
1/3
cup sugar

tablespoons vegetable oil

cup miniature semisweet chocolate chips

Directions

  • 1 Heat oven to 400ºF. Place paper baking cup in each of 12 regular-size muffin cups, or grease bottoms only of muffin cups.
  • 2 Beat egg slightly in medium bowl; stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups.
  • 3 Bake about 15 minutes or until golden brown.

For the best flavor, be sure to use bananas that are very ripe.

Just for fun, stir 1/3 cup toffee chips, candy-coated chocolate candies, peanuts, banana chips or raisins into the batter.

...just got mine out of the oven. I can't just eat ONE! Yummm. I replaced the veg oil w/ applesauce (4 lrg tblsps). Also, 1/2 cup sugar and 2 splenda (individual) packs. 1 full cup of chocolate chips. 3 fork-smashed ripe bananas. 1 egg, premixed. 2 1/2 cups bisquick. No milk. I filled each cupcake cup and baked them for approx 22 mins. They came out perfect! Gotta go eat another one before my kids get home!!

We made these in our cupcake baker. We subbed out Truvia for the sugar (the ratio is 1:2). We also added some peanut butter chips. DELISH. Should have made more.

Good stuff! I did not have choc chips so I subbed with cran-raisins and used 1/3 cup cranberry honey instead of the sugar, all else was the same and they are wonderful!
