...just got mine out of the oven. I can't just eat ONE! Yummm. I replaced the veg oil w/ applesauce (4 lrg tblsps). Also, 1/2 cup sugar and 2 splenda (individual) packs. 1 full cup of chocolate chips. 3 fork-smashed ripe bananas. 1 egg, premixed. 2 1/2 cups bisquick. No milk. I filled each cupcake cup and baked them for approx 22 mins. They came out perfect! Gotta go eat another one before my kids get home!!

We made these in our cupcake baker. We subbed out Truvia for the sugar (the ratio is 1:2). We also added some peanut butter chips. DELISH. Should have made more.

Good stuff! I did not have choc chips so I subbed with cran-raisins and used 1/3 cup cranberry honey instead of the sugar, all else was the same and they are wonderful!

This is a simple, quick and delicious recipe. My son loves muffin tops. Got muffin top pans recently and used them for the first time with this recipe. Turned out great! They are airy and light. 10 minutes (or 11 for more golden brown) out came 6 giant muffin tops, with some batter left. Next time will try to use smaller scoops to make 12.

I've been making this recipe for years! It's really only 5 ingredients - bananas (the riper, the better), egg, sugar, bisquick, oil. That's it! If I have it, I add a handful of raisins, and pecans or walnuts. I most often bake them as "coffee cake" in a square pan, and then cut them into portions. Don't let them overbake - too dry then. My kids always gobble them up for breakfast or in their lunchbox for school. Sometimes I add a glaze made of powdered sugar and milk, drizzled on the top. Today I'm trying to add cranberries, because I got some whole cranberries from our CSA farm. With or without the chocolate chips, this is a great recipe. Thank goodness for Bisquick!

This was the first time I made banana muffins and they were superb! I loved them! I left out the chocolate chips because I was out but they were still super good. Next time going to add some nuts as well :)

These muffins turned out great and my 12 yr old even commented on how moist they were! I didn't add milk as others suggested, I used 4 very ripe bananas and mixed all ingredients together before adding the bisquick mix and chips. I also added some chopped nuts for added texture. I did let them bake for 20 minutes instead of 15.
