    Heat oven to 425°F. Place paper baking cup in each of 12 regular-size muffin cups.

    In medium bowl, stir all ingredients until blended. Divide batter evenly among muffin cups.

    Bake 15 to 20 minutes or until golden brown and tops spring back when lightly touched. Cool 5 minutes; remove from pan to cooling rack. Serve warm.

  • For a bigger banana flavor, add 1 mashed ripe banana to the batter.
  • Omit the baking cocoa and sprinkle 1/2 teaspoon chocolate chips on the batter in each muffin cup instead before baking, and the result will be a melted chocolate filling inside the muffin.
