Known for their smoky spiciness, chipotle chiles are dried jalapeño chiles. Chipotle chiles are sold dry in bulk or in pacakges. They are also canned in adobo sauce, a spicy, dark-red Mexican paste made from ground chiles, herbs and vinegar. Adobo sauce is rather potent; to make this relish a bit hotter, add more adobo. To make this relish less spicy, use just one chipotle chile.
This smoky pico de gallo is excellent with grilled chicken, fish or pork.
