cups Rice Chex® cereal (gluten free)
1
bag (3 oz) fat-free butter-flavor microwave popcorn, popped
1/4
cup dry-roasted peanuts
3
tablespoons canola or vegetable oil
1/3
cup grated Parmesan cheese
2
teaspoons chili powder
2
teaspoons garlic powder
  • 1 Heat oven to 300°F. In very large bowl, mix cereal, popcorn and peanuts. Drizzle with oil; toss until evenly coated.
  • 2 In small bowl, mix remaining ingredients; sprinkle over cereal mixture. Toss until evenly coated. Spread cereal mixture in ungreased large roasting pan.
  • 3 Bake uncovered 15 minutes, stirring once. Spread on waxed paper to cool, about 10 minutes. Store in airtight container.

    Because people were complaining about the spices didn't "catch" the mixture, I actually mixed the spices directly into the vegetable oil and then drizzled that over the chex mixture. It worked perfectly and tasted great! I also added some pretzels to the mixture bc I wanted to make it last longer (plus I had some about to spoil). Would make this again, but want to try some other ones first! They all look too good!

    I thought this sounded like a fun recipe. I tried as it, and found that the other posters were correct. it is bland, as much of the seasoning falls to the bottom. So, I double the Chili Powder and Garlic powder, added 1/2 t. of salt, and mixed this with the oil. I then tossed the oil with the Chex Mix mix, and then re-tossed with the parmesan, then followed instructions as outline. Stronger flavour, and really seemed a hit with the guests!
