Chicken Wedge Salad

Ingredients

slices bacon

cup mayonnaise

cup plain yogurt

tablespoons red wine vinegar

oz crumbled blue cheese (3/4 cup)

head iceberg lettuce, cored, cut into 6 wedges

packages (6 oz each) refrigerated cooked chicken breast strips

large apple, chopped (about 2 cups)

cup chopped red onion

cup glazed walnuts (from 3.5-oz bag)
  • 1 In 10-inch nonstick skillet, cook bacon over medium-high heat until crisp; drain on paper towels. Crumble bacon; set aside.
  • 2 Meanwhile, in small bowl, mix mayonnaise, yogurt, vinegar and blue cheese.
  • 3 On each of 6 serving plates, place 1 lettuce wedge. Arrange chicken, apple, onion and walnuts around each wedge. Drizzle with blue cheese dressing; sprinkle with bacon.

Expert Tips

Glazed nuts can be found in the crouton or baking aisle of your supermarket. The sweetness adds a nice dimension to the flavors in this recipe, but you can also substitute regular walnuts or even pecans, if desired.
