Chicken-Vegetable Soup with Dumplings

Mmm, dumplings. Even Mom couldn't make this heartwarming soup better—or easier!

Ingredients

cups cut-up cooked chicken
1
carton (32 oz) Progresso® chicken broth (4 cups)
1
tablespoon chopped fresh parsley
1
tablespoon chopped fresh thyme leaves
2
cloves garlic, finely chopped
2 2/3
cups Green Giant® frozen mixed vegetables, thawed and drained
1
cup Original Bisquick® mix
1/3
cup milk

  • 1 In 3-quart saucepan, heat all ingredients except Bisquick mix and milk to boiling, stirring occasionally.
  • 2 In small bowl, stir Bisquick mix and milk with fork until soft dough forms. Drop dough by 18 teaspoonfuls onto boiling soup. If dumplings sink into soup, carefully bring them to top of broth using slotted spoon. Reduce heat to medium-low.
  • 3 Cook uncovered 10 minutes. Cover and cook 15 minutes longer.

I just made this soup and I lifted the lid to check it and all my dumpling are gone...what did I do wrong? It smells good though...

My family was not over joyed with this soup. It was a little bit of a pain to make and the dumplings were soft. I should have read the reviews first. Not bad overall but not sure if I will do this one again.

Made this myself with a few changes to suit the family. Was a very satisfying and easy meal to make. For those whose dumplings were too soft you may want to cook them a little bit longer and make sure your lid covers the pot well.
