can (10 3/4 oz) condensed cream of chicken soup

cup sliced carrots (2 medium)

teaspoon dried oregano leaves

cloves garlic, minced

package (7 oz) dry cheese tortellini

cup grated Parmesan cheese, if desired

  • 1 Remove broccoli from freezer; let stand at room temperature to thaw. In 5-quart saucepan or Dutch oven, mix all remaining ingredients except tortellini and cheese. Heat to boiling.
  • 2 Stir in tortellini. Reduce heat; simmer uncovered 30 minutes, stirring occasionally.
  • 3 Stir in thawed broccoli; simmer 5 to 10 minutes longer or until broccoli is crisp-tender. Sprinkle individual servings with cheese.

Leftover roast chicken or turkey is ideal for this recipe. Prepackaged frozen diced cooked chicken can also be used. Or simply purchase a deli-roasted chicken and remove the meat from the bones.
